-We had a busy week in and around the 11th district. Monday night was a Middletown Town Council meeting. I got a chance to hear some concerns from constituents of mine in Estates of St. Anne.


-On Tuesday, the Governor signed my HJR15 recognizing the 75th anniversary of Lou Gehrig’s retirement from baseball and raising awareness about Lou Gehrig’s Disease/ALS. On hand was a crusader for the cause and my constituent, Kayla Wilson, who joined the Governor dumping the water as part of my ice bucket challenge. A good time was had by all for a good cause.


-On Wednesday I had an Unclaimed Property Task Force meeting and a town hall meeting with constituents at Hartly Elementary School. Thank you to everyone who attended. I really appreciate you stepping up and bringing forward your concerns about this great state.


-Thursday evening was the moving 9/11 ceremony at the Smyrna Citizen’s Hose #1. Friday was the annual Volunteer Firefighter Lunch at Dover Downs. A huge thank you to all of Delaware’s first responders.


-Yesterday was the Delaware GOP annual convention. I got a chance to take part in an Emerging Leaders panel. I really enjoyed the opportunity to speak and answer questions about Delaware’s future.

-In addition to the events I have already mentioned, we have a lot more going on. Tuesday at 7 p.m. at the Hartly Fire Hall is an informational session about the Tappahanna Tax Ditch situation. Thursday at 1 p.m. is the Vintage Atlantic Wine Region event at Harvest Ridge. Friday at 9 a.m. is a dedication for the Hartly Elementary School’s new sign. Saturday morning is a show cancellation liquidation sale at Trinity Tactical 9 a.m.-3 p.m. at 4435 Summit Bridge Rd in Middletown. Call 302-355-1772 for more details. For whatever reason, the topic of Jamaican Jerk sauce came up in a couple of conversations over the last couple of weeks. I love jerk and it is fairly easy to make. You can use this recipe as a marinade or a sauce for pork, chicken, fish, or add butter beans and cook into rice.


Jerk has 3 basic ingredients:

-Scotch Bonnet peppers

-Freshly ground allspice

-Fresh thyme


I usually make the sauce a little different every time. As long as you use the three above, the flavor can be manipulated. Here is the most recent incarnation. Careful, it is VERY spicy.

-3 de-seeded Scotch Bonnet peppers

-1 teaspoon fresh thyme

-1 tablespoon freshly ground allspice

-1 teaspoon ginger powder

-1 garlic clove

-1/2 a medium onion

-Salt and pepper to taste

-large dash of nutmeg

-1 cup sweet red wine (I used Blue Hen Blue by Harvest Ridge Winery)


Combine all the ingredients in a blender or food processor. Use as an overnight marinade for your choice of meat. Or, brush on meat while cooking. Or cook down to make a sauce, adding more wine as needed. Or, why not do all three?
