New Location Thursday- Baked Jerk Trout- March 5th 2017 Update

Spring to winter to spring to winter….

 

-Monday night is the annual Wild Game Dinner in Leipsic benefiting Ducks Unlimited. Those who have been on my weekly update list know my fondness for wild game, so this is always a fun event!

 

-On Tuesday is the first meeting of a task force looking at modernizing Delaware’s voting machines. Obviously our top priority is keeping the integrity of our republican system of government.

 

-Thursday is a coffee with constituents at a NEW location! The Drunk’n Baker in Smyrna. See below for more details. Also on Thursday is a meeting down in Hartly to try to figure out some way to stop vehicles from leaving the road in town and ending up on peoples’ yards.

 

-On Friday is a groundbreaking for First State Military Academy’s new obstacle course. Not sure if I should wear a suit or athletic gear to try it out…..

 

-Sunday the 12th is the annual St. Patrick’s Day Parade through Smyrna. Also, Daylight Savings Time starts.

 

-We are putting the final touches on our 2017 11th District Constituent Surveys. They should be hitting mailboxes in the next couple of weeks.

 

-Our initial date/time fell through for the Governor’s visit to one of my coffee meetings. However, the Governor is still interested in visiting the coffee meetings of elected officials in order to talk about the budget. I am in the process of coordinating with his staff which of the meetings below would be best for that. Standby for more details as I make them available.

 

-I am happy to announce my next round of constituent meetings that will be held through March 2017. I invite constituents and non-constituents alike to stop by one of the following meetings to share a question or concern about a legislative or district matter that may be on their mind:

 

·         COFFEE MEETING AT NEW LOCATIONThursday, March 9th – 8 a.m. to 9 a.m. – The Drunk’n Baker (1 N. Main Street, Smyrna)

·         MEET & GREET/WINE TASTINGFriday, March 17th –  5 p.m. to 6:30 p.m. – Harvest Ridge Winery (447 Westville Road, Marydel, DE)

·         COFFEE MEETING – Tuesday, March 21st 8 a.m. to 9 a.m. – The Young Bean Coffee Shop (314 Main Street, Clayton)

 

I have done jerk recipes before. This one was one of my favorites and was also one of the most simple.

 

-3 tbsp olive oil

-3 de-seeded Scotch bonnet peppers

-1 large clove garlic

-6 green onions

-pinch of smoked salt

-dash of pepper

-dash of nutmeg

-1 tbsp freshly ground allspice

-1/2 tbsp dried thyme

-juice of 1 lemon

-3 whole rainbow trout

 

Add all the ingredients except the fish in a blender or food processor. Blend until it reaches a chunky paste. Let stand a few hours. Preheat oven to 400 degrees. Rub the fish with a lot of the paste. Wrap each fish with foil. Bake 10 minutes. Flip. Bake 10 minutes. Serve.
