Free Coffee with Consituents this week- Taco Lasagna- February 1st update

Friends for Jeff Spiegelman,

The first three weeks of session have come and gone. Now we are on a six week break while the budget is put together.

-Congratulations to Harvest Ridge Winery for a successful Wine and Cheese event. Congratulations also to the Blackbird Community Center for a STANDING ROOM ONLY Muskrat and Meatloaf dinner.

-Despite being on break, this week is a busy one. Monday night is a Kenton Town Council meeting.

– On Wednesday I have a meeting at the Middletown DelDOT yard. Wednesday night I have a Joint Sunset Committee meeting.

-Thursday I have coffee with constituents at Willey Farms. Please join us at 8-9 a.m.

-Thursday afternoon is a Leadership Central Delaware lunch. Thursday evening is a meeting about the town of Hartly.

-Saturday I am the guest judge for a soup cook-off at Willey Farms starting at 1 p.m. Should be fun!

– SODA & ICED TEA MEETING – Thursday, March 12th – 12-noon to 1 p.m. – Little Anthony’s Pizza Shop (325 Main Street, Townsend)

– COFFEE MEETING – Tuesday, March 24th – 8 a.m. to 9 a.m. – The Young Bean Coffee Shop (314 Main Street, Clayton)

– MEET & GREET – Saturday, March 28th – 11 a.m. to 12-noon – 3 Palms Petting Zoo (924 Blackbird Forest Road, Clayton). Stop by and see Jeff at 3 Palms before the Easter Egg/Scavenger Hunt event starts at the zoo at 12-noon. (The rain date will be Saturday, April 11th.) 

After a couple of weeks of breakfast items, we now return you to a family-sized dinner. This was an experimental cooking success. Feel free to modify the ingredients as you see fit. The only thing that is set in stone on this recipe is you want the beef layered at the bottom and top and the cheese at the top. See below.

-1 ½ lbs ground beef

-1 can diced tomatoes

-1 medium onion

-1 clove chopped garlic

-1 sweet pepper

-(optional) 1 or more jalapeno peppers

-3 prepared and chopped tomatillos

-1 can re-fried beans

-Mexican seasoning (chili powder, cumin, garlic, oregano, coriander, salt, and pepper)

-shredded cheddar cheese

-large Flour tortillas

Brown the meat with the seasoning. Add can of diced tomatoes. Set aside. Pan fry the onion, garlic, and peppers until the peppers are soft. Add tomatillos. Set aside. Preheat oven to 300 degrees. Layer the bottom of a cake pan with flour tortillas. You want it to fill the pan as much as possible. If you have to, rip up two tortillas to cover the bottom. Add a thin layer of the beef. Layer tortillas. Add the peppers and onions mixture. Layer tortillas. Add a layer of beans. Layer tortillas. Add a layer of cheese. Layer tortillas. Add another layer of beef. Layer tortillas. Top with a layer of cheese. Bake 20-30 minutes or until hot all the way through.
