Corned Beef and Cabbage

Friends for Jeff Spiegelman,

I hope you remembered to spring your clocks forward. If not… you may wish to do that BEFORE having to get up for work Monday morning. Just a thought.

-Tuesday is going to be a busy day for me in Leg. Hall. I have two bills on the agenda. In the House is HB227 which updates Delaware’s Farm Wineries code to be more in line with the feds in order to help out that industry in our state. In the Senate is my HB34 which helps move more control of education out of the DOE and more towards the individual districts where it belongs. Tuesday night is the Home Builder’s Legislative Reception after session.

-On Thursday I am getting a tour through the Delaware military recruiting station in Dover. Thursday afternoon is a meeting of the House Small Business Caucus.

-Friday is the annual CDCC Legislative Lunch and a meeting with Delaware State Police Troop 3.

-Saturday the 19th, Jenn, Saul, and I will be hunting for Easter Eggs at 3 Palms Zoo in Clayton (see below for details).

·         MEET & GREET – Saturday, March 19th11:30 a.m. to 12:30 p.m. – 3 Palms Petting Zoo (924 Blackbird Forest Road, Clayton).  (The facility will also be hosting an Easter Egg hunt that day, as well as on the rain date, starting at 11 a.m. and continuing for the rest of the day.)  The Meet & Greet RAIN DATE is Saturday, March 26th.

·         ICE CREAM SOCIAL – Tuesday, April 5th12-noon to 1 p.m. – Mamie Warren Senior Center (1775 Wheatleys Pond Road, Smyrna). Join Jeff for a free scoop of ice cream. 

·         MEET & GREET/WINE TASTINGSaturday, April 9th –  5 p.m. to 6:30 p.m. – Harvest Ridge Winery (447 Westville Road, Marydel, DE)

·         COFFEE MEETING – Thursday, April 21st – 8 a.m. to 9 a.m. – The Young Bean Coffee Shop (314 Main Street, Clayton)

Corned beef is actually pretty easy to make… as you can tell from the very lazy instructions below. Seriously, that is all there is to it.

-1 package corned beef brisket from super market

-however much cabbage, onion, potato, and carrot the recipe calls for on the package

Try to get a brisket that is as evenly proportioned and as tender as possible. Follow the instructions on the package. That’s. About. It. It really is that easy
