Caribbean Guacamole- March 20 Update

Nice “spring” weather we are getting…

-I will not have an update for next week. Enjoy your Easter.

-This is the last week we are in session before we go on a two week break.

-A couple times a year, the Governor meets with small groups of legislators to see how things are going in the state. One of these meetings is Wednesday. I am looking forward to it.

-On Wednesday in Legislative Hall we are honoring Sandra Hall, Delaware State Teacher of the Year and resident of the 11th District.

-Wednesday evening is a chicken and dumplings dinner at the Townsend Fire Hall.

-Friday is Subs, Soups, and Salads for lunch at the Clayton Fire Hall.

UPDATE: My next round of Meet and Greets have been scheduled. Stop by if there is something on your mind and you would like to chat.

·         ICE CREAM SOCIAL – Tuesday, April 5th12-noon to 1 p.m. – Mamie Warren Senior Center (1775 Wheatleys Pond Road, Smyrna). Join Jeff for a free scoop of ice cream. 

·         MEET & GREET/WINE TASTINGSaturday, April 9th –  5 p.m. to 6:30 p.m. – Harvest Ridge Winery (447 Westville Road, Marydel, DE)

·         COFFEE MEETING – Thursday, April 21st – 8 a.m. to 9 a.m. – The Young Bean Coffee Shop (314 Main Street, Clayton)

Having already made corned beef and cabbage earlier in the week, when St Patty’s Day came along, I needed something else to match that theme. I could have cooked something Irish. Instead, I made something green. Very green. And Caribbean-Mexican fusion. Which, of course, has nothing to do with St. Patty’s Day…. except being green.

-5 ripe avocados

-1 tbsp garlic powder

-1 tbsp allspice powder

-1 tbsp thyme

-2 chopped scotch bonnet peppers

-salt and pepper to taste

-3 chopped and prepped tomatillos

-1 small chopped onion

Combine all ingredients except 1 avocado in a food processor. Blend until all ingredients are well chopped. Transfer to a bowl. Slice the remaining avocado and stir it in. Remember to hold on to one or two of the pits. Keeping them in the guacamole helps keep it from getting brown.
