Campaign Season- 2 meetings this week- Chorizo enchiladas- April 3rd Update

Welcome back, everyone. I hope you had a very good Easter. As it turns out, there is an election this year! This is probably not the first time you have heard about it, right? My great campaign staff is currently putting together some updates to my website, planning our campaign kick-off, putting together our fundraiser schedule, and getting ourselves ready for knocking on doors. I do not have an opponent as of yet, but we are working hard as if we do.

-If you have a Jeff Spiegelman yard sign, I would be very happy to have you display it again this year whenever you are ready. We painted the 11th yellow in 2012 and 2014. Let’s make it three in a row! If you need a yard sign, please let me know at jeff@jeffDErepresentative.com

-Monday night is a Kenton Town Council meeting at 7 p.m. Wednesday night is a Townsend Town Council meeting at 7:30 p.m.

-On Tuesday, April 5th I am hosting an Ice Cream Social at Mamie Warren Senior Center at noon. This is open to any and all constituents who would like to stop by and have some ice cream and/or chat with me about issues in and around the 11th

-On Thursday we have a meeting about the Land Protection Act legislation that has come through the Joint Sunset Committee. We are much closer to some compromise language that continues the Open Space program but also protects the property and privacy of land owners.

-On Saturday, April 9th, I am hosting a Meet and Greet at Harvest Ridge Winery. This event is also open to the public and I would be happy to have you. It is from 5 p.m. – 6:30 p.m. Come out and let me buy you a glass of wine or let’s chat.

·         MEET & GREET/WINE TASTINGSaturday, April 9th –  5 p.m. to 6:30 p.m. – Harvest Ridge Winery (447 Westville Road, Marydel, DE)

·         COFFEE MEETING – Thursday, April 21st – 8 a.m. to 9 a.m. – The Young Bean Coffee Shop (314 Main Street, Clayton)

WARNING: this is NOT health food. But, let’s face it, every once in a while you want to make something that is just plain not good for you. Despite that, Jenn and I really enjoyed this recipe. It is one that came to me while wandering around the supermarket trying to figure out what to cook.

-1 lbs chorizo sausage

-3 sliced poblano peppers

-1 sliced onion

-1 large garlic clove chopped

-2 tbsp olive oil

-1 12 oz jar tomato sauce

-1/2 lbs shredded cheddar cheese

-1 large handful Sunchips that have been broken up

-large flower tortilla shells

-3 cups cooked white rice (cook with chicken broth)

-cilantro- lots of it chopped

-5 tomatillos, sliced

Spice Mixture (makes 6 tablespoons)

-2 tbsp chili powder (for spicy, use chipotle)

-1 tbsp coriander powder

-1/2 tbsp cumin powder

-1 tbsp oregano

-1/2 tbsp smoked paprika

-1/2 tbsp smoked salt

-1/2 tbsp onion powder

-1 tbsp garlic powder

Mix the cilantro in with the cooked rice. Set aside. Add the tomatillos to the tomato sauce, season with 1 1/2 tbsp spice mix, and bring to a light boil. Cover and simmer while you are cooking everything else. The sauce is ready to use when the tomatillos are very soft. Fry the garlic, onion, and peppers in the oil until the garlic turns brown. Season with 1 ½ tbsp spice mixture. Set aside. Season the chorizo with 1 tbsp spice mixture. Brown in the same pan. Drain. Preheat the oven to 325 degrees. Wrap the chorizo with some of the peppers and onion in the flour tortilla shells and place in a square baking pan. You want to fill as much of the pan as possible. Pour the sauce over the shells. Pour the Sunchips over the sauce. Layer the shredded cheese over the Sunchips. Bake until the cheese is thoroughly melted.
