Corned Beef II- Coffee Tuesday- March 19th 2017 Update

Last weekend was a bit crazy on Sunday and I was unable to complete my normal weekly update.

 

-Tomorrow I am going to be stopping by the Delaware Farm Bureau breakfast before class. Then, tomorrow night is the New Castle County Chamber of Commerce dinner at the Chase Center.

 

-Tuesday is our next coffee with constituents at The Young Bean in Clayton from 8 a.m.-9 a.m. From there I am on my way to help with the special election in the 2nd District of Kent County Levy Court. At noon is a Joint Sunset Committee meeting where the elimination of the State Board of Education will be discussed. Then session. Then Wilmington University and the Delaware Home Builders Association have legislative receptions. Then, maybe, home to sleep.

 

-Wednesday is the annual Central Delaware Chamber of Commerce Legislative Luncheon. I am honored to have been invited to be part of the panel again this year. Wednesday afternoon I am going to try to make it to the 302 Back To Blue rally.

 

-On Thursday is the next meeting of the Delaware Sportsman Caucus at 12:30 p.m. We are going to get an update from the American Suppressor Society. Please let me know if you would like to attend. It is free and open to the public. Thursday evening is the DSEA legislative reception.

 

-On Saturday is the 2nd annual Chili Cookoff at Harvest Ridge Winery starting at noon. Saturday night at the Felton Fire Hall is the Delaware chapter of the Wild Turkey Federation’s annual dinner.

 

-Sunday is a Hartly Breakfast. Then some time with the family gardening to relax.

 

-2017 constituent surveys should be hitting mailboxes this week.

 

-We are putting the finishing touches on our meeting with the governor. Next week’s update should have the location, date, and time.

 

-I am happy to announce my next round of constituent meetings that will be held through March 2017. I invite constituents and non-constituents alike to stop by one of the following meetings to share a question or concern about a legislative or district matter that may be on their mind:

 

 

·         COFFEE MEETING – Tuesday, March 21st 8 a.m. to 9 a.m. – The Young Bean Coffee Shop (314 Main Street, Clayton)

 

I forgot an ingredient from the fish recipe two weeks ago- banana leaves. Wrap the fish in the banana leaves and then the foil.

I cook a corned beef a few times a year. I am still perfecting it. This is a combination of a traditional corned beef and a smoked pastrami.

 

-1 corned beef brisket or round

-1 spice packed from the corned beef package.

-1 bay leave

-dash of pepper, cumin, allspice, coriander, and mustard seed

-1 minced clove garlic

 

Rinse the corned beef and soak in water for a few hours. While soaking, combine the spice packet and spices with a couple cups of water in a large pot and set aside. Set the smoker to high smoke. Rinse the corned beef again and let come up to room temperature. Smoke on high for ½ hour. Transfer to the pot. Add enough water to cover. Bring to a low boil. Cover and let simmer until tender (about 2 hours). Slice against the grain.
