October means a lot of things to a lot of people. A big one is pumpkin flavored everything. I find pumpkin repulsive. But, I love pumpkin seeds. After carving one with Saul today I cooked up the seeds in a couple different ways. This was my favorite:
-1/2 pumpkin worth of seeds with the orange goo mostly removed
-Dark brown sugar
-Peri Peri chili (aka Birds Eye chili. Aka African Yellow Peppers) powder
Preheat oven to 350 degrees. Spray a non-stick pan with the cooking spray. Toss the seeds with some salt, brown sugar, and chili powder. Spread evenly on pan. Cook for 15 minutes. Stir and re-spread. Cook for another 5-10 minutes or until the seeds are golden brown and the sugar has caramelized.
