11th RD Meeting Monday- Dill Salmon and Tomatoes- October 22 2017 Update

Friends for Jeff Spiegelman,

Annnnnd it’s summer again. I think I got sunburned walking around at a couple of events this weekend.

-Monday night at 7 p.m. is the next 11th District GOP meeting at the Kenton Ruritan. Come join us.

-On Thursday I am looking forward to getting together with my caucus for an off-season meeting to discuss the upcoming legislative year.

-Friday night is the “Boots and Bling” event being put on by the 11th and 29th RDs starting at 5:30 p.m. at the Green Turtle.

-Sunday morning is a Hartly breakfast.

-Below is my meeting with constituents schedule for the rest of the year. Come to one or all for some good conversation about what is going on in Delaware politics.

Monday, November 20th 8 a.m. to 9 a.m. Willey Farms. Townsend, DE

 

Cooking for Jenn right now means a lot of pregnant-safe fish. Here is another good salmon recipe.

 

-1 large salmon fillet, skin on

-1/4 cup dill

-1/2 cup chopped celery

-1/2 dozen green onions, sliced

-1 clove garlic, chopped

-salt and pepper to taste

-1 tbsp olive oil

-1 dozen cherry tomatoes

Preheat oven to 300 degrees. Mix all the spices, veggies (except the tomatoes), and oil in a small bowl. Rub the flesh of the fish in this mixture and toss the cherry tomatoes in it. Place the fish, skin side UP, in a pan with a tight fitting lid. Scatter the tomatoes around the fish. Cook until desired doneness is reached and the tomatoes JUST begin to shrivel. If the tomatoes are done but the fish is not, scoop them out, set aside, and continue to cook the fish. When done, gently remove the tomatoes as a side item (eat them whole) and enjoy your fish with a squeeze of lemon.
