Hartly Hardware Monday Morning- Low Country Boil Revised- August 5th 2018 Update

Last week’s recipe was a popular one. Thank you to everyone for your suggestions. I took many of them into account as I cooked the low country boil tonight for dinner. What I learned is this week’s recipe below.

-Come join us tomorrow at 9 a.m. -10 a.m. at Hartly Hardware for our next meeting with constituents. I keep hearing from many of you that you mean to show up and bring me an issue that I may be able to help resolve but you don’t feel that it is important enough to bring it to a meeting like this. While I appreciate you trying to be diplomatic about it, the reason I have these meetings is for that exact purpose. Don’t be shy. Come to one or all.

-Monday evening is a Kenton Town Council meeting beginning at 7 p.m.

-On Wednesday, August 8th the governor is signing the Pay for Success bill (SB242). This piece of legislation is aimed at allowing the state to contract with private enterprises in order to get things done that are perhaps better not handled by the state.

-On Thursday morning I am a guest speaker for the Smyrna-Clayton Rotary’s monthly meeting.

-Thursday afternoon I am participating in a hunting technology demonstration in Maryland for the Delaware Sportsman Caucus. Hopefully we can bring some of this new technology to the people of Delaware.

-Saturday morning is the annual Kenton Ruritan Tractor Show at the Kenton School. This event is free and open to the public.

-On Sunday I will be participating in the annual Governor’s Cup at Owen’s Station. Hopefully I can do better than last year. I was rather embarrassed to lose to the governor as badly as I did…

-We are pleased to announce our next round of constituent meetings. Come to any or all for some good conversation.

Thank you to everyone who emailed me about last week’s low country boil recipe. It was one of my most popular weekly updates. Some things went well. Some things did not. Below is the same recipe with some updates in all caps.

1 ½ lbs multi-colored fingerling potatoes

½ lbs andouille sausage cut into 1 inch pieces

½ lbs smoked kielbasa cut into 1 inch pieces

3 ears corn broken into thirds

7 cloves garlic THICKLY SLICED

1 MEDIUM ONION, QUARTERED

½ LBS CARROT CHIPS

¼ cup Old Bay

1 lemon

2 CUPS BEER

2 lbs raw extra large, peeled, tail on, shrimp (at least 16-20 per pound)

Recipe also says chopped parsley, black pepper, melted butter, and hot sauce

Arrange the potatoes in a single layer at the bottom of a 6-quart or larger slow cooker. I would recommend using a slow cooker bag. Layer the sausage, CARROTS, ONION, and garlic in that order on top of the potatoes. Season with Old Bay and pepper. Slice the lemon in half. Squeeze half of it over the slow cooker and slice up the other half for wedges for serving. SLOWLY pour the beer into the slow cooker. The liquid should be about halfway up. IF IT IS NOT HALFWAY UP, ADD ENOUGH WATER TO REACH THAT LEVEL. Do not stir. Cover and cook on high for 2.5 HOURS. GENTLY PLACE THE CORN ON TOP. COOK ANOTHER 2-2.5 HOURS. Add the shrimp and stir gently until they are submerged. COOK 15-20 MINUTES more until they are cooked through. Strain and serve over newspaper. Add the parsley if you like. Serve with the lemon, butter, and hot sauce. And paper towels. Lots of paper towels.
