Barbacoa- March 15th Update

What a busy, busy week. This week we are back in session and we have a lot of work to do…..

-Monday night was a weekly meeting of the 11th District GOP, Tuesday night was the monthly meeting of the Kenton Ruritan, Wednesday and Thursday night I had Joint Sunset Committee meetings, Wednesday afternoon was the Central Delaware Chamber of Commerce Legislative Lunch, Thursday afternoon was tea with constituents at Little Anthony’s Pizza Shop in Townsend, Friday night was tastings with constituents at Painted Stave, and today was the Smyrna/Clayton St. Patrick’s Day Parade… whew.

-This week we are back in session on Tuesday. In addition, Thursday is a meeting of the Small Business Caucus.

-Friday night is Chicken and Dumplings take-out from the Townsend Women’s Club. Saturday night is the Smyrna High Alumni Dinner.

-On April 25th, the 11th District GOP will be doing a country dinner and roast of outgoing chairman John Foltz. I will be roast-master. I have been waiting YEARS to take a couple shots at John like this. Please come watch the show! For more information, please go to the event page:

-Here are the next round of constituent meetings for March:


– COFFEE MEETING – Tuesday, March 24th – 8 a.m. to 9 a.m. – The Young Bean Coffee Shop (314 Main Street, Clayton)

– MEET & GREET – Saturday, March 28th – 11 a.m. to 12-noon – 3 Palms Petting Zoo (924 Blackbird Forest Road, Clayton). Stop by and see Jeff at 3 Palms before the Easter Egg/Scavenger Hunt event starts at the zoo at 12-noon. (The rain date will be Saturday, April 11th.) 

I did not get much of a chance to cook this week as I was out Monday-Friday for political events. However, I am cooking tonight. There are a lot of pre-made mixes out there that make some good food. Don’t be afraid to spruce them up a bit. That is what I am doing here. I am sorry I am not cooking something more Irish on St. Patrick’s Day. Whoops.

-1 packet Frontera barbacoa sauce

-1 can Campbell’s tomato, chipotle, and olive oil soup

-1 packet onion soup mix

-1/2 tbsp garlic

-1/2 tbsp smoked paprika

-1 tbsp chili powder

-1 tbsp coriander powder

-1 chopped onion

-1 chopped sweet pepper

-Salt and pepper to taste (remember, the onion soup mix already has a lot of salt)

-2 lbs chuck roast or bottom sirloin

-1/2 tbsp olive oil

Put the olive oil in a pan. Get it very hot and sear the meat on all sides. Place in a slow cooker. Mix the rest of the ingredients in a bowl. Pour over meat. Cook on low 6-8 hours. Allow to cool enough to skim off and discard some of the fat. Serve on tortillas with cheese and/or fresh veggies.
