Coffee in Hartly Tuesday- Thai Lemongrass Pork Soup- January 16th Update

A day late in getting this update to you, but it still has all the great content you have come to enjoy. I hope.

-A huge thank you to the Townsend Volunteer Fire Company for presenting me with a tribute. Keep up the good work, everyone. You are a credit to the First State!

-Tuesday morning is my next coffee with constituents at Hartly Hardware. See below for more details. Come join us!

-On Tuesday, the new governor is going to be sworn in at Legislative Hall. Governor-elect Carney certainly has a big plate of state issues that are going to need to be worked out. I look forward to working with him to solve whatever may arise. To outgoing governor Markell- we certainly had our disagreements, but thank you for your decades of service to the state I know we both love.

-Wednesday is our first committee day of the year and it is a full one. Also, Wednesday night is a Chicken and Dumplings dinner at the Townsend Fire Hall.

-Thursday is the first meeting of 2017 of the Small Business Caucus. Thursday night is the Delaware Agricultural Industry’s annual banquet.

-I am happy to announce my next round of constituent meetings that will be held through March 2017. I invite constituents and non-constituents alike to stop by one of the following meetings to share a question or concern about a legislative or district matter that may be on their mind:

I have been experimenting a lot recently with simple ingredients in my cooking. The results have been pretty good. This is a good example of one that is a little labor intensive but easy to make. Don’t be intimidated by the name. As you will see below, it might not be as exotic as you think.

 

-1 ½ lbs pork country ribs

-6 green onions. Chopped

-1 clove garlic. Chopped

-1 ½ cup sliced celery

-1 medium onion. Sliced

6 large stalks of lemongrass, sliced lengthwise into 4-5 inch pieces

-Fresh cilantro

-3 limes

-2 Serrano peppers. Sliced.

 

Bring a quart of water to a boil. Add in half the medium onion, garlic, and half the celery. Season with salt and pepper. Cover and simmer until the celery is soft. Add lemongrass stalks and simmer 10 minutes. Strain to preserve the broth. Discard the solids. Season the ribs with salt and pepper. In a very hot pan, sear the ribs on all sides. Put in a slow cooker, add the broth, the rest of the celery, and the green onions. Cook 6 hours on low until the pork falls off the bone. Pull the pork and discard the bones. Squeeze 2 limes into the soup. Garnish with cilantro, peppers, and a very thin sliced lime wedge.
