I am very glad the hurricane missed us. I hope you stayed safe during the nasty weather over the last few days.

-Good news! Delaware is about to start a Sportsman’s Caucus. I have been invited to be the chair. This bi-partisan and bicameral group is open to the public and will be used to promote hunting and fishing in the state of Delaware. The First State was one of only three states without a Sportsman’s Caucus. I am very proud to serve my state and constituents in this way. -Monday night at 7 p.m. is a Kenton Town Council meeting. Wednesday night at 7:30 p.m. is a Townsend Town Council meeting. Thursday night at 7 p.m. is a Kent County GOP Meeting. Whew…….

-On Wednesday I am touring the Delaware Public Health Lab. I was asked to do so by my constituents who work at the facility. I am looking forward to seeing them in action.

-Cookbooks are here! Volume II is ready for you. We are asking for a $30 donation and one of these cookbooks can be yours. It contains all the recipes from my weekly email updates from March 2014 to March 2015. Please let me know if you are interested and thank you for the support.

-I invite constituents to stop by one of the following meetings to share a question or concern about a legislative or district matter that may be on their minds. These meetings are also a great place to pick up a 2015 volume II cookbook!

I did not have any takers who sent me their pulled pork recipes. I think because that is a very private thing and nobody wants to give out their secrets…. and certainly not to a politician!

Instead, here is a rub I made that can be used for pulled pork or chicken. Next week, I will send you the beer can chicken recipe I used with this rub. That’s right, ladies and gentleman. This is a two-parter!

-12 Scotch bonnet peppers. Often marked as “Caribbean Peppers”. These are a variant of habanero peppers and have a distinct flavor.

-Fresh thyme. I grow it in my garden and picked a handful for this recipe.

-1 ½ tablespoons allspice

-1 teaspoon salt

-1 teaspoon pepper

If you have a smoker, set it to high smoke. If you are using charcoal, set the coals on one side of the grill so you can have a lower temperature, indirect heat spot for the pepper. Spread the peppers out on a piece of foil. Smoke or grill on indirect heat until dry. Flip the peppers over half an hour to an hour to prevent burning. It is difficult to know how long this takes. For me, it was a few hours. When they are getting close, spread the thyme out on the foil. Smoke until dry. When finished, combine all ingredients in a spice grinder.
