This is our last week of session before the Finance and Capital Improvements/Bond break that takes up all of February. We are back in session in March. There is a lot of accomplish this week

 

-Thank you Governor Carney for the State of the State address. As always, I am looking forward to working with the governor. We have a equal love for making things better in this great state. It sounds to me like the disagreement is going to be where it most often; cost. What we can afford and what we cannot afford is often the most important challenge we face.

 

-Monday night is the monthly meeting of the 11th GOP RD at the Kenton Ruritan. Meeting begins at 7pm

 

-Tuesday morning is my next coffee with constituents at Tony’s Sausage House. See below for details

 

-At 1130am on Tuesday in the Tatnall Building is the first Delaware Sportsman Caucus of 2018. This is open to the public. Come join us.

 

-Sunday is a Hartly Breakfast.

-Last week we did a healthy recipe together. This week, in the spirit of inclusion, we are going to go the other way. I saw this recipe on the internet and decided to give it a shot. I learned some things in my failure. First, the right fit is important. You was shrimp large enough to make the whole thing worthwhile, but not so big as to not fit in the pepper. You should be able to easily slide the whole shrimp in with just the tail sticking out. Try it and let me know how it goes

 

-An equal number of large, uncooked, tail-on, shrimp and jalapeno peppers (see my note on size above)

-1 ½ cup flour (approx)

-1 cup corn starch (approx)

-1 tbpn Old Bay Seasoning

-1 cup thick, dark, beer (approx)

-Enough oil to deep fry

 

Cut the tops off the peppers and (carefully!) remove the seeds. Try not to split the pepper when you are doing this. Season the shrimp with a pinch of Old Bay and slide into the pepper. Beat 1 cup flour, 1 cup corn starch, the rest of the Old Bay, and the beer to form a very thick batter. It should be very sticky. If it is not, add more flour. Heat oil until drips of water cause some splattering. Set a small, shallow tray aside and pour the rest of the flour on it. Coat the pepper/shrimp in flour making sure to get the top. Coat in the batter making sure to get the top. Deep fry on medium heat until golden brown and the shrimp is cooked (approx 5 minutes)
