Young Bean Monday- Sushi Rice- December 3rd 2017 Update

I hope you are ready for the holiday season!


-While I said in my last update that a couple Monday’s ago was the last constituent meeting of the year I failed to notice that I did have another one coming up this week. Monday morning from 8am-9am at the Young Bean in Clayton. Come join use. This one WILL be the last one of 2017


-Monday evening at 7 is a Kenton Town Council meeting. Wednesday at 730 is the Townsend Town Council meeting.


-On Thursday I will be part of the ceremony recognizing century farms in Delaware. My constituents and neighbors, the Ross family farm turns 100 this year. Congratulations.


-Friday evening is the annual Kent County GOP Christmas party. Email me if you would like more details.


-Saturday evening is the Citizens Hose banquet.


I like to make homemade sushi around this time of year for reasons that you will see below. Obviously, with Jenn VERY pregnant, I can’t do raw fish. However, a lot of really good sushi is actually cooked food. The trouble is usually getting the rice just right. Below is my work in progress. If you have other suggestions, please let me know.

-2 dry cups sushi rice (very important that is it is rice designed for sushi)

-4 cups water

-1/4 cup unseasoned rice vinegar

-1.5 tbpn sugar

-3/4 tbpn salt


Heat the vinegar on a stove until just about boiling. Add the salt and sugar. Whisk until all solids are dissolved. Set aside and let come to room temperature. Wash the rice until the water runs clear. Cook in the water until it is done. Transfer to a wide pan or dish. Gently fold in the vinegar mixture with a plastic or wooden spoon (don’t use metal). Cover with a towel and move outside where it is cold. Let stand 10 minutes. Gently fold again. Repeat until rice is room temperature and sticky.
