No Update Next Week- Blackberry Beef Ribs- November 5th Update

I hope you remembered to “fall back”.

-No update next week. I will be out of the country. Congratulations to my baby brother on his wedding!

-I am sorry to be missing the Veterans’ Day festivities around the state. A huge thank you to all men and women, past and present, who have put on the uniform of the greatest nation on Earth.

-Our last coffee with constituents meeting is Monday, November 20th 8 a.m. to 9 a.m at Willey Farms Townsend, DE. Come join us. In the meantime, we will be putting together our 2018 meeting schedule for January-April.

Beef ribs are a fun thing to cook. I keep trying different recipes with them. This one turned out pretty good if you like sweeter meats.

-8 beef ribs

-1 sliced yellow onion

-1 sliced red onion

-1 cup chopped celery

-1 sliced red pepper

-1 sliced yellow pepper

-2 chopped garlic cloves

-Fingerling potatoes (a dozen or more)

-4 springs rosemary

-pinch of salt

-generous helping of pepper

-8 oz. beef broth

-1 cup creme de cassis

Preheat oven to 350 degrees. In a very hot pan, brown all sides of the beef ribs. Combine all ingredients in a roasting pan with a lid or that you can cover tightly with foil. Cook for 2 hours. Take out of oven, move ribs to a different pan with the ribs pointed up. Cook 10 minutes. Flip so the meat side is up. Cook 10 minutes.
