2 Constituent Meetings this week- Turkey Enchiladas- September 13 Update

Busy week coming up for constituent meetings. Wednesday from 7-8 p.m. at Hartly Elementary School I am having a Town Hall meeting. Please join me if you have any issues that I may be able to address. Saturday is our rain day for 3 Palms Zoo. Please come join me at either of these events!

-Also coming up this week I am attending a fundraiser Thursday evening at 7 p.m. at Harvest Ridge Winery for Hans Riegle (please email me if you would like more details). On Friday I am attending the Acceptance Day ceremony at First State Military Academy. Also on Friday is the Delaware Volunteer Firefighters Association Lunch.

-Saturday evening is a Beef and Beer event benefiting the Hartly Volunteer Fire Co. at their fire hall. Please email me if you would like more details.

-Cookbooks are here! For real this time. Volume II is ready for you. We are asking for a $30 donation and one of these cookbooks can be yours. It contains all the recipes from my weekly email updates from March 2014 to March 2015. Please let me know if you are interested and thank you for the support.

-I invite constituents to stop by one of the following meetings to share a question or concern about a legislative or district matter that may be on their minds. These meetings are also a great place to pick up a 2015 Volume II Cookbook!

Meet and Greet — Sept. 19, noon-1 p.m., 3 Palms Petting Zoo, 924 Blackbird Forest Road, Clayton.  

Soda and Iced Tea Meeting — Sept. 21, noon-1 p.m., Little Italy Pizza Shop, 325 Main St., Townsend.

 

Ice Cream Social — Wednesday, Oct. 7, noon-1 p.m., Mamie Warren Senior Center, 1775 Wheatleys Pond Road, Smyrna. Join me for a free scoop of ice cream.

Meet and Greet/Wine Tasting — Oct. 30, 5-6:30 p.m., Harvest Ridge Winery, 447 Westville Road, Marydel.

Obviously, making everything from scratch is the better way to go. However, this recipe is already labor intensive enough that skipping a few corners helps preserve your sanity. Does not prevent it from being delicious.

-2 lbs turkey burger

-12 oz can of refried beans

-small jar or can of chipotle and/or southwest flavored salsa

-1 medium onion, chopped

-3 cubanelle peppers, chopped

-6 oz can of green chilies

-24 oz can of enchilada sauce

-shredded cheddar cheese

-whole wheat tortilla shells

-chili powder, cumin, coriander, garlic powder, salt, and pepper to taste

Generously season the meat and brown in a pan. Set aside and preserve liquid. Fry the onions and cubanelles in the liquid until the onions begin to brown. Mix the meat, onions, and peppers and set aside. Put the beans and salsa in a pot and slowly heat while stirring generously. Set aside. Put the enchilada sauce and green chilies in a pot and slowly heat while stirring generously. Set aside. Preheat the oven to 300 degrees. In a non-stick pan, add the meat to the shells and add a layer of the beans/salsa mix. Wrap tightly. Do this with enough shells so that the enchiladas are packed in. Pour the sauce over the top and layer with cheese. Bake until heated throughout and the cheese is melted.
