Back to Work- Ham and Egg Cups- January 6th 2019 Update

Friends for Jeff Spiegelman,

Happy New Year! And welcome to the 150th General Assembly. Since we go in two year cycles, that means 300 years of representative democracy in Delaware. We are back to work on Tuesday with nearly a quarter of the 41 members being freshman. Should be an interesting two years.

-On Monday morning is our next meeting with constituents at Tony’s Sausage House on Kenton Road from 8 a.m.- 9 a.m. Come out and let me buy you a cup of coffee. Monday evening is the State Chamber of Commerce Annual Dinner.

-Tuesday is opening day of the G.A. I will be sworn in for my fourth term serving the people of the 11th District and the State of Delaware. Thank you to the voters for sending me back. I look forward to working for you again.

-On Wednesday I will be joining the governor to honor some Delaware firefighters who went out to California to help battle the wildfires. Well done and thank you for your service to this great country.

-The next Sportsman Caucus meeting is on Thursday at 11 a.m. in the House Majority Hearing Room. We will be outlining our legislative priorities. These meetings are open to the public if you would like to join us. The day after is fellow co-chair senator Brian Pettyjohn’s birthday. I mention this to remind him that he is old.

-We are ready to announce our next round of meetings with constituents. Please stop by one or all and let me know what is on your mind.

Monday, January 7th – Tony’s Sausage on Kenton Road 8 a.m. to 9 a.m.

Friday, January 25th – Painted Stave in Smyrna 5 p.m. to 6:30 p.m.

Tuesday, February 19th – Eats and Sweets in Smyrna  8 a.m. to 9 a.m.

I saw this recipe online. I have yet to try it, but, well, how bad could it be! This is for those of us who like a little protein with our protein for breakfast.

-Sliced ham

-Eggs

-Black Pepper

-Parsley

Preheat oven to 400 degrees. Spray a cupcake pan with cooking spray. Place a slice of ham in a single layer into the cupcake molds leaving a little bit of overlap. Crack an egg into the cupcake molds on top of the ham. Season with pepper. Fold the ham overlap over the egg. Cook for 15 minutes or longer if you like your egg more well done. Sprinkle with chopped parsley and hot sauce (optional, but…. ). Enjoy.
