I hope you had an enjoyable and safe Halloween. Saul wasn’t…. thrilled. Maybe he will like it better next year.

-Monday night is a Kenton Town Council meeting. Wednesday night is a Townsend Town Council meeting.

-I will not be able to attend the Hartly Fire Co. dinner Saturday night. So, you all should go in my place in support of this great organization.

-Good news! Delaware is about to start a Sportsman’s Caucus. I have been invited to be the chair. This bi-partisan and bicameral group is open to the public and will be used to promote hunting and fishing in the state of Delaware. The First State was one of only three states without a Sportsman’s Caucus. I am very proud to serve my state and constituents in this way. -Cookbooks are here! Volume II is ready for you. We are asking for a $30 donation and one of these cookbooks can be yours. It contains all the recipes from my weekly email updates from March 2014 to March 2015. Please let me know if you are interested and thank you for the support.

I don’t do many desserts. Jenn is usually the baker of the house. This recipe combines both our talents. Maybe I should have shared it last week BEFORE Halloween. Oops. Well, it is still tasty!

-1 pumpkin’s worth of seeds with the slime removed
-salt
-olive oil
-chocolate chips

Preheat oven to 350 degrees. Toss the seeds with salt and olive oil. Spread the seeds out on a piece of foil so that they are mostly flat and not touching each other. Bake until golden brown. Let cool. Melt the chocolate chips in a microwave. Add the seeds, stir gently, and spread them out onto a piece of parchment paper. Place in the fridge until the chocolate re-hardens. Enjoy.
