COOKBOOKS!!!!! Breakfast Burrito- August 16th Update

Cookbooks are here! For real this time. Volume II is ready for you. We are asking for a $30 donation (Please send checks to Friends for Jeff Spiegelman. PO Box 869. Clayton, DE. 19938) and one of these cookbooks can be yours. It contains all the recipes from my weekly email updates from March 2014 to March 2015. Please let me know if you are interested and thank you for the support

-`We will soon have our meetings with constituents list finalized. These are free events where you can come and talk to me about issues that may be facing Delaware, pick up the cookbook you ordered, or both!

-We are looking for volunteers for the Spiegelman/Hensley Big Ball team. We are playing Friday August 28th 8pm-9pm. Please email me for more details!

-The town of Hartly is up and running. I would like to publicly thank everyone, from the council members to the people who have expressed their support, for making this possible. There is still a lot to do. But, judging by the turn-out Tuesday night to the Town Council meeting, I am confident things are headed in the right direction.

-Yesterday was the very entertaining Middletown Peach Festival.

-Tomorrow night I will be attending a seminar hosted by the National Sportsman Association. Several elected officials and I are trying to put together a Sportsman’s Caucus in Delaware. Stay tuned for more details.

-Tuesday morning is the Smyrna School District Back-to-School breakfast.

My parents, who taught me how to cook, came up with this recipe the other day. I am not exactly sure what they did, so this is just an approximation.

-1 lbs Kenton Ruritan sausage

-1 medium onion, chopped

-1 garlic clove, chopped

-1 can diced tomato

-1 tbpn cumin powder

-1 tbpn coriander powder

-2 tbpn chili powder

-Shredded cheddar cheese

-2 tbpn olive oil

-4 eggs

Pan fry the sausage until cooked. Break up into pieces and set aside. Lightly fry the garlic and onions in the olive oil. Add the can of tomatoes, sausage, cumin, coriander, and chili powder. Mix. Bring to a boil. Poach the eggs in the sauce. When finished, turn off the heat and sprinkle the top with as much cheese as you like. Scoop the eggs with all the stuff onto burrito shells. Serves 2-3.
