January Update- Eggs in a hole

Friends for Jeff Spiegelman,

We are back in this week. It is an honor to serve the good people of the 11th District in the 148th General Assembly.

-Please join me for lunch at Little Italy Pizza Shop on Main St. in Townsend from 12-1 p.m. tomorrow (Monday, January 12). Tea and soda is on me.

-Thank you to those who came out to tastings with constituents at Painted Stave this past Friday night.

-Please join me Monday evening at 6:45 p.m. at the Kenton Ruritan for the monthly meeting of the 11th District GOP.

-Tuesday morning is the unveiling of the Delaware State News’ Kent County Profile at the AMC Museum at 8:30 a.m.

-Tuesday is also the swearing in ceremony at Leg. Hall for the 148th GA followed by the Governor’s reception at Woodburn.

-Friday evening is the Delaware Standardbred Owners’ Association Annual Awards Banquet.

-Sunday is the annual Police Chief’s Lunch and football party at Dover Downs. This year, I predict that the two teams going to the Super Bowl will be the ones that win their Conference Championship games.

– MEET & GREET/WINE TASTING – Friday, January 23rd – 5 p.m. to 6:30 p.m. – Harvest Ridge Winery (447 Westville Road, Marydel, DE)

This is an easy breakfast recipe that also happens to be one of my favorites. Think of it as a medium fried egg, toast, and french toast all rolled into one.

-1 egg

-1 slice of bread. You can use store bought slices or cut down a loaf of sourdough or similar into roughly the size of a store bought slice.

-Salt and pepper to taste

Lightly toast the bread. Cut out a hole in the center of the bread roughly 1 ½ inches in diameter. Butter a pan and put in the slice of bread. Crack and egg and put it in the bread’s hole. Add salt and pepper. Pan fry until the egg is cooked on the one side. Gently flip. Pan fry until the egg is cooked on the other side.
