Meeting Thursday- Venison Neck Roast- December 8 2019 Update

Friends for Jeff Spiegelman,

Classes are ending, the weather is cold, the shopping is (mostly) done, and the tree is up. Yep, it is the holidays!

-Happy late birthday, Delaware!

-On Monday is the annual Wreathes Across America event at Legislative Hall honoring our nation’s warfighters, past and present.

-Elianah turns 2 on Tuesday!!!!! For her birthday we took one of Saul’s old toys and re-packaged it (kidding!)

-On Thursday, we have our next meeting with constituents. See below for more details.

-On Friday the 13th (!) the House GOP is caucusing to talk about the upcoming Legislative year.

-Saturday is breakfast with Santa at North Smyrna Elementary. So we get another shot at a picture of the kids with Santa where Elianah is (1) looking at the camera, (2) not screaming, and (3) not giving Santa the stink-eye.

-We are still putting together our full schedule of meetings with constituents. In the meantime, we have a new (old) location:

-12/12 If Heaven Had A Flavor on Main Street in Clayton. This is the former Young Bean. 8 a.m.- 9 a.m.

Wild game is one of my favorite things to cook. I love to try new meats, techniques, etc. Here is one that I am still perfecting. The first attempt was very promising.

-1 venison neck, well trimmed

-2 cloves of garlic, pressed

-1 medium onion, chopped

-1 cup beer

-salt and pepper to taste

-oil

Heat the oil in the frying pan. Season the roast on all sides with salt and pepper. Brown the roast on all sides in the pan. Transfer to a slow cooker. Rub the top of the roast with the garlic. Add the onion on top of the roast and around the sides. Gently pour the beer over the roast. There should be about an inch of water at the bottom of the cooker. Cook on high for 6-8 hours or until the roast easily shreds with a fork. Shred and serve as you would a beef roast.
