Mid-October Update and Cheeseburger Buns

Friends for Jeff Spiegelman

With Covid still interrupting my meetings with constituents (which I REALLY miss having) we are still doing less updates.  This will probably be the last one before Halloween.

-While I am unopposed I have been trying as much as I can to help some other reps in their races.  Monday evening I am attending a fundraiser for Rep Kevin Hensley.  If you would like more details of the event, please let me know

-On Thursday night I am talking to a group of Scouts about civics and civic duty.  Talking to community groups is one of the best parts about being an elected official

-Priority number 1 for the 11th District is rural internet.  I have been attending meetings with shareholders about how to effectively and inexpensively accomplish this.  If you are without reliable internet, please contact me so I can see if we can help you out.  The state is trying to collect as much data on the issue as it can to figure out the best way forward.

-Have a happy and safe Halloween (however you are choosing to accomplish that, given the state of the world right now).

-After the election, if we are still unable to effectively do in-person meetings with constituents, I will work on setting up some virtual ones.  While this is less than ideal given the issues with internet that plague the 11th, I still want to be there as much as I can for the citizens I am proud to represent.

Get those burgers in before the winter shuts them down!  I don’t usually do cheeseburgers because dairy messes me up.  But, every once in a while, I find a recipe that is worth the…. discomfort.  Most people prep their cheeseburgers by putting a slice of cheese on the cooking meat.  Here is a different way of adding cheese to your burgers adapted from my new favorite TV chef.

-Good, heavy hamburger bun like a brioche

-Mexican blend of thick-cut shredded cheese.

-Smoked paprika and chili powder (spicy if you like)

-1/2 leek, sliced

-1 clove garlic, sliced

-Olive oil

-2 of the following; mayo, ketchup, sriracha, mustard, or thick teriyaki sauce.

Heat the oil over medium heat.  Sautee the leek and garlic until they begin to brown.  Set aside to cool a bit.  Mix the shredded cheese with a large dash of each of the seasonings.  Add the leeks and garlic and stir.  Smear the top half of the bun with a sauce of your choice.  Smear the bottom half with the other sauce.  Top both halves with the cheese mix.  Toast, cheese up, until the bread is slightly crunchy.  Broil on high until the cheese begins to bumble.  Use with your favorite burger.

-Enjoy your week.
