Sportsman Caucus Wednesday- Sous Vide Corned Beef- March 21 2021 Update

Friends for Jeff Spiegelman,

Loads of interesting bills coming up in House committee meetings this week via Zoom.  If you want info on how to log on to view or give testimony on any of the bills below, please let me know.

-On Tuesday in the Economic Development committee is a bill that would remove the youth and training wage as part of a package of bills discussing the minimum wage that will be in front of the General Assembly this year.  I am on this committee.

-On Wednesday in the Health and Human Services committee is the legalization of marijuana bill.  I am not on this committee.

-In the Revenue and Finance committee is a bill that would raise the Personal Income Tax on all persons and businesses earning $125,000 or more.  I am on this committee.

-On Thursday is session beginning at 3 p.m. 

-On Wednesday, March 24th at 10 a.m. is the first meeting of 2021 for the Delaware Sportsman Caucus via Zoom.  To register in advance go to https://us02web.zoom.us/webinar/register/WN_xgpgajAGSsyyRJk1Yw1X-w

-We had a very successful meeting with constituents earlier this month at the Clayton Fire Hall.  Thank you to everyone who joined us live or live via Facebook.  We will schedule another one for April.  Stay tuned for more details. 

Tried something new with my corned beef this year for St. Patty’s Day.  I will never not cook corned beef like this again.  It was that good.

-1 corned beef point with the spice packet

-12 oz beer

-2 cloves garlic, sliced

-1 medium onion, sliced

-1 packet beef onion soup mix

Combine the spice packet, beer, and soup mix in a pan and bring to a boil.  Cover and turn off the heat.  Prep a sous vide cooker for 180 degrees.  Put the corned beef in a vacuum bag, add the broth you just made, onion, and garlic into the bag and (carefully) vacuum seal as well as you can.  Cook sous vide style for 3 hours.  When finished, save the broth to cook your potatoes, carrots, and cabbage.  Cut the corned beef thin against the grain to serve.
