Session Still Virtual- Bloody Mary Chicken Thighs- March 14 2021 Update

Friends For Jeff Spiegelman,

Spring?  Nope.  False spring.  Still have to spring forward on the clocks.  Say it with me: “WHY DO WE STILL DO THIS?!?!”

-We are doing virtual committee days on Tuesdays and Wednesdays through March.  Thursdays are virtual session days.  Please let me know if you would like information on how to watch or participate.

-Happy St. Patrick’s Day.  In my household, that, of course, means corned beef and cabbage.  Going to cook a tip this year instead of the flat.  This, of course, will make me feel worse after eating it because of the fat content. 

-We had a very successful meeting with constituents earlier this month at the Clayton Fire Hall.  Thank you to everyone who joined us live or live via Facebook.  We will schedule another one for April.  Stay tuned for more details. 

-Speaking of online meetings, we are looking to have a virtual meeting of the Delaware Sportsman’s Caucus next Wednesday 3/24 at 10 a.m.  We will begin advertising the event shortly.  We are waiting because we may have to work around the committee schedule for that day, which will not be announced until later this week at the earliest.

Despite it not being totally spring yet, let’s get a spring-y recipe going. 

-12 oz spicy Bloody Mary mix

-4 boneless skinless chicken thighs

-2 wedges lime.  2 wedges lemon.

-1 tbsp smoked or spicy paprika (or a mix)

-1 tbsp chili powder

-salt and pepper to taste

Marinate the chicken in the Bloody Mary mix overnight.  Heat a grill to medium heat.  Season the chicken with the paprika, chili powder, and salt.  Cook 5-7 minutes.  Flip.  Cook 3-5 minutes.  Squeeze the lemon and lime over the chicken.  Add pepper.  Cook 2-3 minutes more or until internal temp hits 165 degrees.  Serve with pickled red onions and cilantro leaves.
