Willey Farms on Thursday- Greek Chicken Salad- June 4th Update

Friends for Jeff Spiegelman,

I hope everyone had a safe Memorial Day weekend. Now, back to work in the General Assembly. There is still so much to do. Perhaps most importantly is the budget which has yet to reach us in its final format. Looks like it is going to be another very VERY long night on June 30th

-Tomorrow evening I have a meeting with the Governor to talk about issues facing local agriculture based craft beverage businesses.

-Wednesday evening is a Townsend Town Council meeting at 7:30 p.m.

-Thursday is a constituent meeting at Willey Farms (see below).

-On Thursday I am filming another segment of News Makers at the Comcast studio in Dover.

I invite constituents to stop by any of the following meetings to share a question or concern about a legislative or district matter that may be on their mind. We have added a couple of dates and times:

Jeff, this Tzatziki chicken you made is really good.” “Thanks Jenn.” “Its too bad you can’t turn this into chicken salad since you don’t like mayo.” “Hmmm…. I don’t see why not! Good idea!”

I have yet to try this, but this is what I am going to attempt. My wife is a genius.

-3 lbs boneless and skinless chicken thighs

-3 English cucumbers, skinned and sliced

-2 large cloves garlic

-8 oz plain Greek yogurt

-3 tbsp fresh dill

-juice of 1 lemon

Combine all the ingredients except the chicken in a food processor. Blend until smooth. Marinate the chicken overnight in 4 or 5 tbsp of the sauce. Cover and save the rest. Grill the chicken until done. Slice into small pieces. Let cool. Combine the chicken and some of the leftover sauce in a food processor. Pulse until the chicken is your desired consistency. If you want it more saucy, stir in more sauce.
