Coffee Monday Morning- Fire Beef- September 25th Update

Friends for Jeff Spiegelman,

My deepest sympathies go out to the friends and family of the Wilmington Fire Department. To all the firefighters out there, thank you for everything you do. I am so very, very sorry for your loss.

-We had a HUGE showing at the Townsend Parade and Fair. Thank you for all the support.

-Monday morning is a coffee with constituents meeting at Hartly Hardware from 8 a.m.- 9 a.m.

-Saturday October 1st is the Kenton Car Show at the Kenton School.

-From September 19th– October 14th, the City of Dover is establishing a Food Truck Pilot Program. Stop by City Hall between 9 a.m. and 2:30 p.m. Monday – Friday to have a bite with Delicious Cravings. As a huge food truck fan, I am going to try to get there as often as I can.

Saw this recipe on the internet the other day and modified it a bit. Having said that, after cooking it, I should have modified it a bit more. Below is what I SHOULD have done.

 

1 lb chopped rib-eye

1 large red onion. Chopped.

2 leeks. Chopped.

½ cup low sodium soy sauce

1 tbsp black pepper

1 tbsp sesame oil

1 tbsp chili oil

1 tbsp red pepper flakes

½ chopped Cayenne pepper (or, if you like spicier, a chopped Serrano pepper)

1 tbsp sesame seeds

¼ cup chopped peanuts

 

Combine all ingredients except the peanuts in a bowl and mix by hand until everything is evenly coated. Marinate in the fridge overnight. Remove from fridge 30 minutes before cooking. Heat a non-stick pan on medium-high heat. Put entire mixture into the pan and add the peanuts. Stir-fry until cooked (should be just a few minutes). Serve over white rice, noodles, or with iceberg lettuce as wraps.
