Back in Session for 2 Weeks- Experimental Crust- April 7 Update

Friends for Jeff Spiegelman,

We are back in session this week and there is a lot of work to do. In the next couple of weeks I am going to be releasing a couple of bills including one that closes a DUI loophole, makes EZ-Pass work a little better with the public, and modernizes the definition of firearm before a law-abiding citizen gets caught up in an odd, Delaware technicality (what Delaware currently says is a gun, and what is actually a gun, are two different things).

-We are finally back into the swing of things with the Legislative Oversight and Sunset committee. We have our next meeting Monday evening. Afterwards, I am attending the Delaware Industrial Hemp meeting at the Kenton Ruritan beginning at 7 p.m.

-On Tuesday I am attending the Highmark Legislative Luncheon. Obviously, controlling the cost of healthcare will be a topic of conversation.

-On Thursday I am attending the House Small Business Caucus meeting at Legislative Hall. Thursday evening I have the honor of helping swear in the new members of the Hartly Town Council.

-Great news!!! Willey Farms is open for business this coming weekend. They are still rebuilding from the fire, but come out this weekend and see what they have to offer

-On Saturday is our next meeting with constituents at the 3 Palms Zoo’s Easter Egg Hunt. I will be there with Saul and Elianah, but feel free to stop me if you have a question I can answer.

-We have completed the schedule for the next round of meetings with constituents. Please stop by one or all and let me know what is on your mind.

Saturday, April 13th – 3 Palms Zoo Noon to 1 p.m.  Easter Egg Hunt (rain date Saturday, April 27th)

Thursday, April 25th – Little Italy Pizza Noon to 1 p.m.

I have said before that some of my favorite meals are ones where I throw some things together that are left over from other recipes. I made a Mexican-style pot pie filling doing this the other day. But, I didn’t have all the stuff I needed to make a crust. What to do? Experimental cooking to the rescue. But… I didn’t write down any quantities. So, good luck!

-Whole wheat flour

-Corn starch

-1 tsp baking powder

-2 eggs, beaten

-1 bottle heavy beer

Preheat oven to 400 degrees. Whisk all ingredients to make a thick batter. Pour in a thin layer over pie filling. Bake until golden brown, about 25 minutes. I think. Maybe.

— Thanks.
