Campaign Kickoff- Roasted Cherries and Tomatoes- June 3 2018 Update

I am happy to announce my campaign kickoff. Please see below for more details

 

-We are back in session this week for the marathon that is June. Hopefully things go more smoothly than last year when we, unprecedentedly, shut down the government for a few days

 

-On Tuesday is the last meeting of the Delaware Sportsman Caucus for the year. Please go to www.facebook.com/DESportsmenCaucus/ for more details and our agenda. This event is open to the public

 

-On Wednesday, I will be attending the annual Fraunhofer lunch. Every year I get to see what amazing projects they are working on. Wednesday evening is a Townsend Town Council meeting at 730pm.

 

-On Thursday is the annual Governor’s picnic for the legislators.

 

-We are putting together the schedule for our next round of constituent meetings for the summer. Stay tuned for more details.

 

-CAMPAIGN KICK-OFF. On Monday, June 25th I will be officially launching my campaign with a campaign kick-off. 7 p.m. – 8:30 p.m. at the Kenton Ruritan Club in Kenton, DE. Food and non-alcoholic drinks will be available and families are welcome. This event will be free of charge but donations are appreciated (Checks may be made available to Friends for Jeff Spiegelman. This recipe is slightly modified from my roasted cherry tomato recipe. Only, it uses… uh…. cherries in the tomatoes. It sounds “odd” (as Jenn put it) but it turned out really well. It is very easy to make. Be sure to use fresh cherries and get yourself a cherry pitter.

 

-Enough cherry tomatoes (use multi-color) to cover the bottom of whatever roasting pan or pot you are going to use

-A couple dozen pitted cherries

-Dash of Italian seasoning

-Dash of onion powder

-Splash of olive oil

-Splash of balsamic vinegar

-1 chopped garlic clove

-Salt and pepper to taste

 

Preheat oven to 300. Gently toss all ingredients to evenly coat. Add in a single layer to a pan or pot. Tightly cover. Cook for 20 minutes or until the tomato skins begin to slightly shrivel. Do not overcook or the tomatoes will burst in the pan.
