I hope everyone is having a nice February. What is weird to think about is this time last year we were starting to hear reports about some sort of virus in Asia….
-Our first meeting with constituents in almost a year is Friday! Yay! I am excited to be doing this part of my duty as a legislator again.

A friend just turned me on to 302 Aquaponics. I never thought I would say, “Wow, this is really good lettuce.” To me, lettuce wasn’t food. Lettuce was something food eats. This changed my mind. These lettuce wraps are easy and delicious.
-4 skinless, boneless chicken thighs, cut into small pieces
-2 stalks Amadeus Romaine lettuce
-1 medium onion, sliced
-1 clove garlic, sliced
-1 stalk celery, sliced
-1/4 cup whole cashews
-1 tbsp olive oil
Heat the olive oil. Fry the onions and celery for 2 minutes. Add the garlic and fry until it turns golden brown. Scoop out the veggies and add the chicken. Brown, adding a tiny bit more oil if needed. When cooked through, add the veggies back in and the cashews. Stir fry until hot. Remove from heat and serve over individual lettuce leaves.
