Session Resumes in March- Pickled Red Onions- January 31 2021 Update

Friends for Jeff Spiegelman,

SNOW!!!!!    I love snow.  I know that might cost me votes, but it is the truth. 

-We just finished a January session via Zoom.  We are now on JFC break until March.  Typically this is when the Joint Finance Committee meets to begin putting together the budget.  In addition, the Joint Legislative Oversite and Sunset Committee, of which I am a member, will be reviewing organizations left over from the 2020 General Assembly that never got full hearings because of the COVID shutdown. 

-On Thursday I am meeting via Zoom with the 2021 Leadership Central Delaware class hosted by the Central Delaware Chamber of Commerce.  I am a guest speaker for their roundtable discussion on the topic of legalization of marijuana. 

-Many of you have contacted me about your or a friend/neighbor/family member’s rural internet problem.  I recently talked to another company that may be able to help and I wanted to provide their information as another potential option.  The company is called Bridgemaxx and they can be reached at 844-303-5900 or http://www.bridgemaxx.com/signup.php

-The Kent Lincoln Day Dinner is February 20th at the Modern Maturity Center.  Please let me know if you would like more details.

-We will be putting together another round of meetings with constituents as soon as we figure out exactly how to do that given weather and COVID restrictions.  I miss you all.  

Pickled red onions are a great, multi-use, thing to have around the house.  Sometimes a condiment, sometimes a topping, sometimes a filler, always delicious.  

-1 red onion, sliced thin or julienned

-apple cider vinegar

-white vinegar

-12 whole black pepper corns

-1 clove garlic, thinly sliced.

Find a sealable container just big enough to hold the onions.  Put the garlic and pepper at the bottom of the container.  Fill it with the onion.  Fill the container half full with the apple cider vinegar.  Fill it the rest of the way with the white vinegar.  Seal tightly and give it a bit of a shake.  Store in your refrigerator.  It should be ready to use after an overnight sit.
