Fundraiser Friday- Jambalaya- Patriots Day

On September 11th, 2001, NYPD and NYFD members ran into burning buildings to pull total strangers to safety. After the attacks, rescue workers crawled over the rubble looking for survivors. Why? Because that is what they do. Not just on that day, but every day before and every day since. We will never forgot the sacrifices made by the men and women we hope we never need, but we are sure glad they are there in case we do.

 

-SPIEGELMAN FUNDRAISER THIS FRIDAY!!! Please join me Friday, September 16th from 7-9 p.m. at the Painted Stave in Smyrna, DE. Tickets are $50 which includes a drink ticket. A buffet dinner will be served by Trevi Ristorante, live music by the Brothers Stonesifer, and we have a silent auction with great items. -Monday evening is a Middletown Town Council Meeting. While I am unable to attend to do Daddy-Day-Care-Duties, I encourage residents of Middletown, especially Estates of St. Anne in my district, to attend. I will have someone there representing me if you need assistance.

 

-Tuesday is Primary Day. I am not in a primary, but I encourage you to go vote (if you are able).

 

-Wednesday I am having lunch at Little Italy Pizza Shop in Townsend at noon. Come join me!

 

-Friday is the Delaware Volunteer Firefighter Association lunch at Dover Downs.

This recipe is half lazy and have labor intensive. If you are feeling up to it, feel free to subsitute the jalapeno pepper for something more…. interesting. A couple Scotch Bonnet peppers should do the trick.

-3 links andouille cajun sausage

-1 dozen cooked shrimp

-2 cups rice

-1 10 ½ oz can beef consume

-2 cups water

-2 tbsp butter

-1 chopped jalapeno pepper

-3 chopped shallots

-1 chopped sweet pepper

-3 cloves garlic, pressed

-1 tbsp smoked paprika, chili powder, coriander powder, thyme

-2 bay leaves

-1 tspn tumric

-1 tspn celery salt

-1 14 ½ oz can dices tomatos

-1 8oz can tomato sauce

-1 8oz can small red beans

-salt and pepper to taste

Smoke the sausage at 275 degrees until cooked (about 1 hour, give or take). Fry the shallots, garlic, and peppers in the butter in a pot until the shallots begin to turn translucent. Add the spices and continue to fry another couple minutes. Add the tomatoes, tomato sauce, beans, water, and consume. Bring to a boil. Add the rice, cover, and simmer on low for 15 minutes. Remove from the heat and let sit, covered, another 10 minutes. Slice the sausage into thin disks. Add the sausage and shrimp to the rice and fluff with a fork. Serve with corn bread.
