Happy Day, you Mommies!
-We are back in session this week. Tuesday and Wednesday are committee days. Thursday we are back in Legislative Hall but Zooming from our offices. If you want some information on how to watch the public proceedings, please let me know.
-Monday is the first meeting of the Delaware Bioscience Caucus.
-On Tuesday is the highly publicized meeting of the Judiciary committee in which will be heard a New Jersey style Permit to Purchase a Firearm bill. The committee has a 4 hour time limit. It is going to be a long one. This bill has some questionable Delaware and federal constitutionality. After this meeting I will be going immediately into an Economic Development committee meeting. Going to be a long day.
-On Wednesday is a Revenue and Finance meeting. Shaping up to be a busy week.
-Tax Day is May 17th. You still have a few days if you have not filed yet….
-We are still putting together our next meeting with constituents. With the weather getting better, we might look for an outdoor venue.
There is so much you can do with peppers and onions. Since we are full-on into grilling season, here is a nice way of doing them on your outdoor cooking device.
-1 large onion, sliced
-3 Anaheim peppers, sliced
-1 longhot pepper, sliced
-3 tbsp olive oil
-dash of salt
-large dash of garlic powder
Spray a grill basket with cooking spray. Or, you can create a basket with foil. Fold it over a few times to give it some strength in the bottom and punch a few holes in it. If you are using foil, be VERY gentle when stirring or flipping the veggies.
Set the grill to medium heat. Allow to come up to temp. Add all the veggies to the basket. Mix the salt, garlic, and olive oil in a small bowl. Put the basket over the heat and pour the olive oil mix over top. Cook 5 minutes. Stir. Repeat until you reach your desired level of doneness. For me, it is when the tips of the onions begin to brown.
