-FYI, the Delaware State Fair is still going on this week with some modifications.
-The monthly meeting of the 11th District GOP was moved from last Monday evening to this Monday evening (July 27th at 7 p.m.) at the Kenton Ruritan Club. Special guest will be former state representative and now state GOP Vice-chair Pam Bakerian.
-On Thursday I have volunteered to take part, via Zoom, in the Kent County task force meeting about the rural internet project. I have some serious concerns about the program as it stands now. Those concerns will be amplified if students have to attend school remotely this fall.
-On Saturday August 1st at 10 a.m. I am attending the Clayton Veterans Park dedication.
-Thank you to everyone who has requested a sign. We are still in the process of getting them out to you. If you would like a yard sign, please let me know and a member of my team would be happy to drop one off to you. PLEASE, PLEASE, PLEASE KEEP THEM 10 FEET OFF THE ROAD OR DelDOT WILL COME AND TAKE THEM FROM YOU AND MAIL ME A FINE.
Plantains are delicious…. But you do have to be patient. Buy them a few weeks ahead of when you want to cook them. They are ripe when the skins are almost completely black and it looks like something you probably shouldn’t eat. Also, air friers are great.
-1 plantain cut into ½ inch disks
-Spray on olive oil (if you don’t have any, toss the plantains in olive oil instead of spraying the pan)
-Dash of salt
Preheat the fryer to 400 degrees. Spray the basket and add a single layer of the disks. Sprinkle with salt. Fry 7-10 minutes. Turn them over. Fry another 5-10 minutes or until they are golden brown.
