Rural Internet Meetings- Air Fried Green Tomatoes- August 16 2020 Update

Nice weather we are getting…  I can’t tell if my garden likes it or not.  Mostly because I can’t get out to it without donating a pint of blood to the marsh birds. 

-On Wednesday evening please join me and Delaware’s Chief Information Officer (and fellow bowtie wearer) James Collins on a ZOOM meeting to discuss the difficulties we are finding getting internet to the rural areas of Central Delaware.  The meeting will be from 5:30pm to 6:30pm.

I am aware of the challenges (or, even, the irony) presented by hosting a virtual meeting for those who may already have limited internet access. -On Thursday morning I am attending the next meeting of the Kent County task force focused on rural internet.  I believe the challenges facing Central Delaware were much greater than anticipated when the state awarded a contract to a company to do the rural internet program.  We are trying to work through these issues. 

-Thank you to everyone who has requested a sign.  A special thank you to those who took the signs down during the storms and then put them back up.  If you would like a yard sign, please let me know and a member of my team would be happy to drop one off to you. PLEASE, PLEASE, PLEASE KEEP THEM 10 FEET OFF THE ROAD OR DelDOT WILL COME AND TAKE THEM FROM YOU AND MAIL ME A FINE. 

Given the weather, I had to pick a couple of tomatoes early.  They were still green so I decided to stick them in the air fryer.  But, I did not have my normal air-fried ingredients.  This was improvised with what I had around the house.  Jenn didn’t like it.  I did. 

-1 large green tomato, sliced into ½ inch disks

-1 egg, beaten

-1/4 cup masa flour

-1tbpn each garlic, onion, chili, and coriander powders

-Salt and pepper to taste

Pre-heat the air fryer to 400 degrees.  Mix the masa, salt, pepper, and powders.  One at a time, dip the tomato disks into the egg.  Make sure the disk is coated.  Press them into the masa flour mix.  Flip and press again.  Place on a baking sheet or wax paper sheet until all the disks are ready.  Air-fry 15-20 minutes, flipping half-way.
