RIP Bill Bullock Sr- Baked Plantains- March 11 2018 Update

Did you remember to spring forward?

 

-RIP Bill Bullock Sr. You were always good to me. You will be missed. Services are on Tuesday.

 

-Tuesday evening is the Home Builders Legislative Reception.

 

-On Wednesday I am participating in a panel at C.R. High School about firearms.

 

-On Saturday or Sunday I am going to try to participate in the Department of Agriculture’s call for volunteers to help plant trees in the Blackbird State Forest Cyprus Branch. Please email me or go to my facebook page for more details.

 

-Saturday evening is the first annual Marydel Fire Company Steak Night.

 

-Here is our constituent meeting schedule. Come to any or all of these events for a little political discussion! Please note we have removed the meeting at the Young Bean which has, unfortunately, closed.

I made a whole Cuban meal tonight. Real Cuban chefs would roll their eyes at my pathetic attempts. One must have is plantains. Usually they are fried but the smoke detectors (and small, sleeping child) in my house prevent me from doing so. I attempted to bake them instead. Turned out pretty well. I also learned the secret to plantains is to let them get ripe enough to be dark yellow with black spots.

 

-Ripe plantains (see above)

-Olive oil cooking spray

-Salt

 

Preheat oven to 450 degrees. Cut the ends off the plantains and CAREFULLY slice each one length wise to cut the skin but not cut into the fruit. Peal and cut on the diagonal 1 inch thick chips. Spray a non-stick cookie sheet with the olive oil and sprinkle with salt. Put the chips on the tray, spray with the olive oil, and sprinkle with salt. Bake 7-10 minutes. Flip. Bake 7-10 minutes. Serve with smoked pork and black beans and rice.
