Running For Reelection- West Indies Stir-Fry- July 5 2020 Update

Friends for Jeff SpiegelmanI hope you had a safe and enjoyable 4th of July despite local, state, and national events. Happy Birthday America.
-On Tuesday is the Delaware primary. I will most likely be spending my day greeting voters in Hartly. Please remember, for the primary, the Department of Elections has consolidated the number of polling places. So you might not be voting in your normal polling place. Please go to the Department of Elections website for more details.
-Also on Tuesday afternoon is the next meeting of the COVID Business Subcommittee via Zoom. This working group is currently providing advice and (hopefully) a plan of action to the governor on how to prevent another shut down. Just as importantly, if the governor shuts us down again, how to mitigate damage (and bring a level of consistency and fairness that was, in many ways, lacking in the first shut down) to businesses, workers, and the economy.
-Also also on Tuesday is the regional meeting of the Kent County GOP at the Kent GOP HQ. This is the watch party for the Primary results. I have accepted the Chairman’s Challenge for the month.
-I am running for reelection for State Representative of the 11th District. It has been one of the greatest honors of my life to have served the people and I am asking for your support for another term.
-If you would like a yard sign, please let me know and a member of my team would be happy to drop one off to you. Many of you have already requested them but we were not ready for them to go out while we were working through the end of session and everything surrounding this year. Please let us know again and we will have one out to you.
-Having not done a recipe in a while, let’s go with something simple, healthy, and delicious. I served this stir-fry with some very spicy chicken drumsticks. The beans and peanuts helped cut the heat of the yard-bird.
-1 16oz can pigeon peas-1/2 heaping cup roasted and shelled peanuts -1 large garlic clove, sliced-2 shallots, sliced-1 tbpn fresh ginger, sliced-Salt to taste-1 tbpn olive oilHeat the oil over medium heat and add the shallots and ginger. Stir-fry 2 minutes. Add the garlic. Stir-fry until the onion turn soft. Add the peas and peanuts. Increase heat to high and stir-fry 3-4 minutes. Enjoy.
