-Warning; SPICY! I love ramen style noodles but I don’t like the flavor packets that come with them. Plus, holy unhealthy, Batman. So how to get a great ramen noodle soup that is a bit healthier….
-2 packets of cheap ramen. Just the noodles. Toss the flavor packet
-2 cups sliced exotic mushrooms (shiitake, etc)
-2 cups vegetable stock
-1 cup water
-1 tbpn sesame oil
-1 clove garlic, chopped
-2 serrano peppers, sliced
-1/2 cup sliced green onions
-1/4 cup soy sauce
-1/2 tspn sugar, ginger, and celery salt
-1 tspn chili powder and pepper
-6 cloves, ground
Heat the oil in a pot with a tight fitting lid. Stir fry the garlic and peppers on medium heat until the garlic begins to brown. Add the onions and mushrooms. Stir fry 3 minutes more. Stir in the soy sauces and all the spices. Cook 2 minutes. Add the stock and water. Bring to a boil. Cover and simmer 5 minutes or until the mushrooms are cooked to your liking. Add the ramen noodles. Cook until they are done to your liking. Enjoy.
— Thanks.
